Two-Ingredient Vegan Chocolate Mousse: A Delightfully Easy Dessert

Who can resist a mouthwatering dessert that is both easy to make and vegan-friendly? Today, I am delighted to share a fabulous recipe for vegan chocolate mousse that only requires two simple ingredients: aquafaba (chickpea liquid) and melted dark chocolate (vegan chips). This dessert is incredibly delicious and presents a fantastic opportunity to involve your children in the joy of cooking. So, let's dive in and discover how to create this heavenly treat!

Before we get to the recipe, let's take a moment to understand the star ingredient of this vegan chocolate mousse: aquafaba. It may sound unfamiliar, but it is something most of us already have on hand: the liquid found in a can of chickpeas. Instead of discarding this liquid, use it as a magical vegan cooking and baking component.

Aquafaba possesses remarkable properties that make it an ideal egg white substitute. It can whip up beautifully, creating a foam-like texture similar to beaten egg whites, making it an excellent binder, providing structure, a fluffy crumb, and lift to various culinary creations such as meringues and mousses.

The science behind aquafaba's unique properties lies in its starch and protein content, which enable it to trap air and create the desired texture when whipped. While some recipes suggest adding sugar and cream of tartar to stabilize aquafaba further, it is not necessary for this chocolate mousse recipe. However, feel free to experiment and customize according to your preferences.

What you’ll need:

  • 7 oz Dark chocolate, melted and cooled
  • 3/4 cup Aquafaba

How to make it:

  • To begin, start by melting the dark chocolate. You can do this using a microwave or a double boiler method.
  • Once the chocolate has melted, set it aside to cool down. Make sure it's completely cooled before proceeding to the next step.
  • In a stand mixer, pour the aquafaba into the mixing bowl.
  • Whip it on high speed until it forms stiff peaks. This process usually takes around 10 minutes.
  • Next, carefully fold in the melted chocolate once the aquafaba has reached the desired consistency.
  • Gently combine the two ingredients until they are well incorporated, ensuring not to deflate the fluffy aquafaba mixture.
  • Divide the mousse mixture among individual serving dishes or ramekins.
  • Place the containers in the refrigerator and allow them to chill for a few hours or until the mousse sets.
  • When ready to serve, feel free to add your preferred toppings, such as fresh fruit, mint, shaved chocolate, or a dollop of vegan whipped cream.

This two-ingredient vegan chocolate mousse is incredibly easy to make and a delightful dessert that will satisfy your sweet tooth. Combining whipped aquafaba and melted dark chocolate creates a heavenly texture and rich flavor that everyone will love. Don't hesitate to involve your kids in the process, as it can be a fun and educational activity for them. So, grab a can of chickpeas and some dark chocolate, and get ready to indulge in this delectable treat. Bon appétit!
